There are 14 sake brewers in Kanagawa prefecture,  each making their own unique "Jizake"(local sake).Here we introduce each brand and their characteristics.

Kubota Shuzou

Sake Characteristics

Founded in 1844, Kubota Shuzou brews "Sagaminada" using spring water from the Tanzawa Mountains.

Sagaminada is a well-balanced sake that strives to make the best use of the rice flavor. It goes well with a meal and can be enjoyed both warm and cold.

Signature Brands

Sagaminada Junmai Ginjo (Miyamanishiki) has a light taste of good quality rice (Miyamanishiki) and a refreshing Ginjo scent made from high quality Kyugo yeast.

It is best enjoyed with grilled white fish dishes.

Shimizu Shuzou

Sake Characteristics

Founded in 1751, Shimizu Shuzou is the oldest sake brewery in Kanagawa prefecture.
It brews sake using abundant groundwater of the Tanzawa Mountains and selected high quality domestic rice in traditional methods. Their sake is characterized by its delicate yet deep and refreshing taste.

Signature Brands

The brand “Iwao no Izumi” takes its name from the 8th generation owner. It is refreshing, but still has an elegant sweetness and umami derived from rice. It goes very well with seafood dishes.

Ooyatakashi Shuzou

Sake Characteristics

 Founded in 1830, Ooyatakashi Shuzou is located in Aikawa town, and only brews Junmai-shu (including Junmai Ginjo and Junmai Daiginjo). It uses the Kimoto-shikomi method, which is used for only one percent of sake production, and continues to make sake rich in flavor and personality. 

Signature Brands

Zarusou Hourai was named after the old name of this area “Zarusou” and the Tendai Mountain, located behind the brewery, the shape of which is reminiscent of Penglaishan in China (Mt. Hourai in Japanese). It is a type of sake that can be enjoyed in a wide range of temperatures, with clear and refreshing taste and strong umami. Cold sake goes well with sea bream carpaccio, seared bonito with herbs, and roast beef with wasabi. Hot sake goes well with dishes such as cooked herring, grilled duck with thin sliced spring onion, and fried fish cake with ginger.

Special Message from Brewery

Kan-zukuri (brewing in winter) begins in mid-October, and the earliest new sake is on sale from late November. From mid-February of the following year, the limited edition "Funaba Jikazume Nama genshu" series, and in September, the autumn limited edition "Hiya-Oroshi" are on sale.

Izumibashi Shuzou

Sake Characteristics

Founded in 1857, Izumibashi Shuzou in Ebina city makes its sake from its own homegrown rice. The entire process from the field, to rice polishing, to brewing is handled locally. If there’s a brand deserving of the name “Kanagawa Jizake”, it’s Izumibashi Shuzou.
All sake brewed is Junmai-shu (including Junmai Ginjo, Junmai Daiginjo.)  

Signature Brands

The brand “Megumi blue label” was named with a feeling of gratitude for the blessing of nature such as soil, water and the sun. This is Junmai Ginjo sake made from 100% Yamada Nishiki rice grown in Ebina. Designed with an emphasis on compatibility with meals, it can be enjoyed  both hot and cold temperatures.

Koganei Shuzou

Sake Characteristics

Since Koganei Shuzou has hired a brewer master 20 years ago, an in-house Touji, who is especially skilled in creating fragrant Ginjo sake. Daiginjo “Sakarimasu” has won the award at the annual Japan sake award for seven consecutive years and has also won a number of awards in Ginjo sake categories.
Koganei Shuzou pursues a variety of other products as well, such as a flavorful, well-balanced sake to go with meals, to complete its wide lineup of high quality sake.

Signature Brands

The brand “Sakarimasu” was named after the house “Masuya” and the expression “Masumasu Hanei” which means “greater prosperity” in Japanese. It is a fragrant Daiginjo made from 40% Yamadanishiki rice from Hyogo prefecture and is slowly fermented at low temperature. 
It is Junmaiginjo which leaves clear aftertaste and makes you imagine the fruity aroma like green apples and pineapples.
It goes well with salt-based dishes such as steamed scallops and sauteed white fish.

Kikkawa Jouzou

Sake Characteristics

 The underground water of Mt. Oyama in Higashi Tanzawa Mountains, which is one of the main tourist destinations in Kanagawa prefecture, is medium-hard water, and the sake brewed by Kikkawa Jouzou using that water has a dry and mellow taste.
They are making an effort to bring out the original rice flavor by doing everything by hand, from washing the rice, to making Kouji and sake yeast, to the actual brewing.

Signature Brands

Junmai Daiginjo and Junmai Ginjo are masterpieces with well-balanced flavor and taste. Excellent compatibility with all kinds of meat dishes.
Daiginjo Sugiyama-ryu (Sugiyama style) is a sake that you can enjoy before meals, recommended with a side dish such as dried fruits.

Junmai sake is suitable cold or tepid as a sake to enjoy with a meal. Daiginjo won the award in the national competition in 2020 and is fragrantly flavorful with a fresh, sharp taste.

Ishii Jouzou

Sake Characteristics

Founded in 1870, Ishii Jouzou is located near Soga Plum Grove in Odawara, which makes famous Umeboshi (pickled plum), and has a wonderful view and warm climate. Many tourists visit the brewery in the plum blossom season, as it is also the season when the new sake is finished. The characteristics of their sake brewing is “four-step fermentation”. Instead of the normal “three-step fermentation”, in which the moromi (main mash) is brewed in three batches, they do four batches using glutinous rice for the final, which brings forth its rich taste.

Signature Brands

The signature brand, “Soga no Homare” was named after the old name of its home village, ”Sogamura”. The four-step fermentation method lends it its rich flavor and brings forth the original freshness of polished rice.
Women and people who drink sake for the first time may prefer another recommendation, Ginjo, a light, mellow, and mild-tasting sake. Great combination with the Odawara specialty ”Shutou”(salted fish guts).

Inoue Shuzou

Sake Characteristics

 Founded in 1789, with a history of more than 230 years, they continue to make sake in the Ashigara Plain , which stretches across the Sakawa River basin, using the cool air from Hakone, underground water from Tanzawa, and carefully selected rice. 
At the time of its founding, the owner, who was engaged in agriculture but trying to find a new business opportunity, stumbled on a stone on the way to the castle town in Odawara. The stone was in the shape of sake bottle and inspired him to start sake brewing, according to the legend.

Signature Brands

One of their main brand “Hakoneyama” was born about 50 years ago for export to European countries. It is Junmaiginjo with a gentle acidity and a smooth taste that clearly shows the ginjo aroma like bananas and melons. 
Another recommendation is Junmai Daiginjo, which won the prize in the annual national sake award in 2021. It uses 100 % Yamadanishiki rice and features mellow aroma like bananas. It has a rich and smooth taste.

Nakazawa Shuzou

Founded in 1825,Nakazawa Shuzou continues, as ever, to make sake with traditional handmade technique. 
In addition to standard sake, they also focus on seasonal sake for every season. You can enjoy seasonal ingredients with the best sake of the season.

Signature Brands

The brand “Matsumidori” was given by the lord of Odawara. This is what it means.
“Matsu” means a row of pine trees along the Sakawa River that runs besides the brewery.
“mi” means the beautiful scenery of Matsuda town and delicious sake.
“dori” means sake and the shape of a sake vessel. 
The theme of Junmai sake is in-meal sake that you won’t get bored of when drinking. The aroma is mild and the taste is light so that you can drink it every dinner. Enjoy with tuna sashimi, boiled peanuts, Oden, etc.
Another recommendation “S.tokyo” uses the yeast Sccharomyces Tokyo NAKAZAWA, discovered by Dr. Ryoji Nakazawa in 1909, which is the second oldest yeast in existence now. Ryo Kagiwada was the first person who used it to make sake after 100 years since its discover. They felt a strong connection with it and decided to name the sake after it.
This sake is brewed with the concept of fruity, sweet and sour taste that is easy to drink. It goes well with roasted beef, cheese and pizza.

Kawanishiya Shuzouten

Sake Characteristics

Founded in 1897, Kawanishiya Shuzouten values not only sake alone, but also the harmony that sake brings out in the flavor of food and food that enhances the taste of sake. All the sake brewed is Junmai sake.

Signature Brands

The brand “Tanzawasan Reiho” is Junmai sake with a mild taste that is used only in Awa Yamadanishiki rice and has been aged in a tank for about 2 years. They recommend “Kudari kan”, which you can enjoy by heating hot and then letting the temperature go down. It pares well with stewed fish, minced fish bowl, marineated mackerel and soup dumplings.
Another signature sake is “Ryu White Label” a Junmaigonjo made from “Wakamizu”, which is produced locally in Ashigara, Kanagawa prefecture. It is a pleasant sake with a mild taste, fresh acidity, and a slight astringency in the month. The name is based on the fact that the mountains of Tanzawa stand upright. It goes well with white fish carpaccio, sautéed asparagus, Tempura of mountain vegetables, and tomato falsi etc.

 Taking advantage of the beautiful nature and abundant resources of Kaisei town in Kanagawa prefecture. They want to make people happy with sake made with traditional brewing techniques.
In order to make the dream come true of conveying the beauty of sake, how to enjoy sake, and the richness of sake to a lot of people, Seto Shuzouten is brewing following the 4 points below.
1. Careful sake brewing with a small amount
2. Use deep groundwater from the Tanzawa mountains
3. Steamed rice technology based on the theory of Japanese traditional vat
4. Careful Koji-making by the box Koji method

Signature Brands

“Ashigari” in Ashigari-go is the old name of “Ashigara” there. 
There are three points: 
1. It uses yeast extracted from the hydrangea in Kaisei
2. It has fresh acidity and a beautiful taste like white wine
3. It reminds of the seasonal views in Kaisei
The sake is brewed with yeast extracted from the flowers of the hydrangea, which is the town flower in Kaisei. It has a refreshing and beautiful taste, which makes you imagine the beautiful seasonal scenery of Kaisei where you can overlook the wide sky and Tanzawa Hakone mountains. Try it with Western food such as prosciutto and cheese.

 Kanei Shuzouten

Sake Characteristics

In Hadano city, Kanagawa prefecture, at the foot of Tanzawa mountains where Mozart’s music is played, they use Tanzawa’s famous water to make homemade sake while preserving tradition. 

Signature Brands

The brand name “Shirasasa Tsuzumi” is a sake named after Shirasasa Inari, one of the three major Inari in the Kanto region.
Another signature Junmaiginjo brand “Wakamizu” uses sake rice called “Wakamizu” grown in Kanagawa prefecture. It’s literally sake grown and made in Kanagawa.
The rice is difficult to handle, but the sake made with it has a soft and refreshing taste. Excellent compatibility with fish and vegetable dishes.
Their specialty is “music sake” brewed by listening to Mozart’s music. They also have a wide variety from Genshu to Daiginjo. Genshu is 18.3 % alcohol and features a slightly rich taste. Enjoy with “Yakitori”(salt grilled chicken)!

Kumazawa Shuzou

Sake Characteristics

Founded in 1872, it is the only sake brewery that remains in Shonan, one of the leading tourist destinations in Kanagawa prefecture. They are working on manufacturing sake that is rooted in that community. 

Signature Brands

The brand “Tensei” is derived from the phrase “Rain has ended, sun is poking out from behind the cloud. ”, in the traditional Chinese story. They work hard to brew sake with a sharp, smooth and quenching taste. It has a gentle Ginjo scent and you can feel the deep taste and high quality sweetness of Yamadanishiki rice. They aim to make in-meal sake to enjoy with dishes. 
“Senpo Tensei” is sake that goes well with a wide range of dishes, such as Western style dishes like marinated fish and herb-grilled chicken.

RiceWine/Moriyama Shuzou

Sake Characteristics

In July 2021, Moriyama Shuzou, which was located in Toei town, Shitara county, Aichi prefecture and has a history of more than 300 years, moved to Odawara city, Kanagawa prefecture with the support of Rice Wine Inc. Even though the location has changed, they pursue the same goal. Their sake making history goes on forever.

Four-season brewing
Normally, traditional sake brewing takes place in winter, but Moriya Shuzou brews all year in a refrigerated warehouse. It is an ideal place where you can concentrate on sake brewing in a stable temperature of 5 degree Celsius throughout the year, which enables them to make fresh sake in any season.

HINEMOS TASTING SET

Time to meet a new sake. The concept is time and names. Each sake is based on a different time such as “SHICHIJI(7 P.M.)”. Each sake is developed to create completely different tastes. Each bottle is 170 ml, so two people can enjoy it with two wine glasses. Especially good for first timers and those who do not drink sake on a daily basis to find their favorite.

The sketches of each brewery were drawn by Mr. Kato, the owner of Gallery Pastime in Chuo ward, Sagamihara city. While the current state may differ, the artist has conveyed the same quaint scenery of the sake breweries.
